Banana and Honey Cupcakes

INGREDIENTS
- 50g butter, softened
- ¼ cup caster sugar
- 1 tbsp honey
- 59g free range egg
- 1 cup self raising flour
- 90g banana, diced
- ¼ tsp ground cinnamon
- 2 tbsp milk
Icing
- 1 cup icing sugar mixture
- 110g butter, softened
- 1 tsp milk
DIRECTIONS
- Preheat the cupcake maker until the ready light switches on.
- Using an electric mixer, cream the butter, sugar and honey until thickened and lightened in colour, approximately 4 minutes.
- Add the egg and beat well. Fold through the flour, banana, cinnamon and milk until just combined.
- Spoon a tablespoon of cupcake mixture into each mini cupcake well and close the lid and cook for 8 minutes.
- Turn the mini cupcakes out onto a cake rack and cool.
- To make the icing, cream all ingredients using an electric mixer for 3 minutes or until the sugar has dissolved completely. Evenly distribute over the cupcakes and serve.
