Chilli Beer Can Chicken

    Ingredients

    • 1 size 16 free range chicken giblets removed, washed, paper towel dried
    • 1 can beer (375ml)
    • 2 teaspoons chilli flakes
    • 2 teaspoons Mexican chilli powder
    • 2 teaspoons rock salt
    • 1 teaspoon lemon zest
    • 2 tablespoons olive oil

    Directions

    1. Preheat a fan forced oven or a sealed BBQ to 180°C.
    2. In a bowl, combine the chilli, zest, salt and olive oil. Brush onto chicken until chicken is fully covered in seasoning.
    3. Open beer can and remove half of the liquid.
    4. Place the chicken oven the beer can, legs down and push beer can into chicken.
    5. Place the chicken onto an oven tray and stabilise with the legs to the front and the beer can to the back, like a tripod.
    6. Roast for 1 hour 15 minutes and allow to rest before serving. Serve with Cajun roasted potatoes.
