Lemon and Basil BBQ Prawns

Ingredients
- 1/2 cup olive oil
- 1 medium Spanish onion peeled, chopped
- 3 clove garlic peeled
- 2 roma tomatoes chopped
- 1 cup basil leaves removed
- 2 lemons rind and juice
- 40 green prawns heads removed
Directions
- Take 20 skewers and soak them in cold water for 10 minutes.
- To make the marinade, place the oil, onion, garlic, tomato, basil and lemon into a food processor or blender and blend until a paste forms.
- Skewer 4 prawns onto each skewer until all skewers are filled.
- Using a pastry brush, coat each skewer with the marinate until all are fully covered.
- Cook in a non-stick frypan for 2 minutes on each side.
