Minestrone Soup in the Soup Maker

INGREDIENTS
- 1 brown onion, diced
- 2 cloves garlic, minced
- 2 celery sticks, thinly sliced
- 2 carrots, halved, thinly sliced
- 400g can red kidney beans, drained, rinsed
- 2 x 400g cans diced tomatoes
- 2 cups beef stock
- 1 tsp salt
- ¼ tsp ground black pepper
- ¼ tsp dried oregano
- 1 bay leaf
- 2 cups cooked pasta, to serve
- ½ cup roughly chopped parsley, to serve
- ¼ cup grated parmesan, to serve
DIRECTIONS
- Place the brown onion, garlic, celery, carrots, red kidney beans, tomatoes, stock, salt, pepper, oregano and bay leaf into the soup maker jug.
- Place the soup maker blending lid on top and secure to the base.
- Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
- After cooking, remove the lid and stir through the cooked pasta. Serve soup with parsley and parmesan cheese.

It's so much easier using a soup maker rather than using a pan and hob and less cleaning up

I would love to win a Kambrook Soup Maker as soup is a staple in our big family. I have recently purchased the Kambrook Pressure Express and don't even take it off the kitchen bench as it is in use 24/7... Well done Kambrook!
