Ricotta Pancakes
PREP TIME: 5 min, COOK TIME: 10 min, READY TIME: 15 min, SERVINGS: 12 piece
Ingredients
- 125 grams ricotta cheese
- 2 x 59g free range eggs separated
- 1 cup milk
- 20 grams butter melted
- 1 cup self raising flour
- 1 tablespoon caster sugar
Directions
- In a bowl, combine the ricotta, egg yolks, milk, butter and flour. Stir until just combined.
- In a separate bowl, whisk the eggs and sugar until soft peaks form. Fold through the batter and allow to stand for 2 minutes.
- Preheat a frypan over a medium heat for 3 minutes. Lightly spray with oil for .25 second each time.
- Add 1/4 cup of mixture to the pan and cook for 3 minutes, flip and cook for a further 2 minutes. Repeat until all batter has been cooked.
