Apricot and Coconut Protein Balls

    INGREDIENTS

    • 30g raw whole almonds
    • 1 tbsp sunflower seeds, roasted
    • 3 tbsp chocolate protein powder
    • 8 medjool dates, pitted
    • 150g dried apricots, chopped
    • 2 tbsp dessicated coconut, toasted

    DIRECTIONS

    1. Place the almonds and sunflower seeds into the 350ml BlitzPro cup; securely attach the grinding blade holder to the cup.
    2. Align the cup onto the motor base, press down and turn the cup clockwise to blend. Blend for 10 seconds or until desired consistency is reached.
    3. Place the protein powder, sunflower seed and almond mix, dates and apricots into the 700ml BlitzPro cup securely attach the blending blade holder to the cup.
    4. Align the cup onto the motor base, press down and turn the cup clockwise to blend. Blend until desired consistency is reached.  (You may need to untwist the container form the motor base and give it a shake to adjust the ingredients to avoid them sticking to the blade and sides of the Blitzpro)
    5. Moisten hands and roll the mixture into approximately 20g balls, then roll them in toasted coconut.
    6. Keep refrigerated for up to 2 weeks.
