Asian Carrot Salad

Ingredients
- 4 carrots peeled, tops removed
- 1/2 white cabbage
- 1/2 bunch shallots roots removed, thinly sliced
- 1/2 cup sesame seeds toasted
Dressing
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 2 teaspoons brown sugar
- 1 clove garlic peeled, minced
- 2 teaspoons sesame oil
Directions
- Using the shredding blade on a food processor, shred the carrot, cabbage and shallots.
- Pour the contents into a salad serving bowl and sprinkle with the sesame seeds.
- To make the dressing, place all ingredients into a sealed jar and shake until the sugar has dissolved.
- Pour the dressing over the salad and serve immediately.
