Asian Style Chicken Noodle Soup

    Ingredients

    • 4 shallots roots removed, thinly sliced
    • 2 clove garlic minced
    • 2cm piece ginger minced
    • 1 litre chicken stock
    • 2 tablespoons soy sauce
    • 1 tablespoon lime juice
    • 1 teaspoon fish sauce
    • 300 grams chicken breast thinly sliced
    • 1 cob corn kernels only
    • 125 grams packet dried rice noodles
    • 1 bunch coriander washed thoroughly, roughly chopped, to serve

    Directions

    1. Place the shallots, garlic, ginger, stock, soy, lime juice, fish sauce, chicken, corn and noodles into the soup maker and securely place the lid on top.
    2. Select the ‘chunky’ soup setting and press START and allow to cook.
    3. Top with coriander and serve immediately.
