Bacon and Egg Pie

    INGREDIENTS

    • 1 loaf chia bread (or any loaf of your choice)
    • 4 short rind rashers bacon, 2cm pieces
    • ½ small brown onion, thinly sliced
    • 6 x 59g free range eggs
    • ½ tsp fresh thyme, minced
    • 1 tbsp parmesan cheese, grated

    DIRECTIONS

    1. Preheat a fan forced oven to 170C and spray a 25cm pie dish with canola oil spray.
    2. Cut the crusts off the chia loaf and slice into 2cm thick slices. Press the slices into the pie dish until they form an even layer over the base of the pie dish.
    3. Evenly place the bacon, onion and thyme over the bread base and then crack the eggs evenly over the top.
    4. Sprinkle with parmesan cheese and place into the oven for 40 minutes or until golden brown and the eggs are cooked through.
