BBQ Chicken Pizza

INGREDIENTS
- 2 tbsp olive oil
- 500g chicken thigh
- 1 tbsp tomato paste
- 2 tbsp bbq sauce
- 1 clove garlic, minced
- 100g baby tomatoes, halved
- 200g pizza cheese, grated
Dough
- 185mls warm water
- 30ml olive oil
- ½ tsp sugar
- ½ tsp salt
- 300g bread flour
- 1 tsp yeast
DIRECTIONS
- To make the dough, place the water, olive oil, sugar, salt, flour and yeast into the bread maker tin and select the ‘DOUGH’ setting and allow to knead.
- Preheat a fan forced oven to 200C and line a pizza tray with baking paper.
- Remove the dough from the bread maker and knead on a lightly floured surface. Cut the dough ball in half and roll each one out to 25cm round.
- In a frypan, heat the oil over a medium heat and then sear the chicken until golden and just cooked through, approximately 4 minutes on each side. Allow to drain on paper towel and then thinly slice.
- In a bowl, combine the tomato paste, bbq sauce and garlic and spread onto each pizza base. Top with chicken, tomatoes and pizza cheese.
- Place into the oven for 20 minutes or until golden brown.
