Beef, Mushroom and Spinach Soup

INGREDIENTS
- 1 tbsp olive oil
- 1 brown onion, diced
- 2 cloves garlic, thinly sliced
- 4 English spinach leaves, stalks removed, finely shredded
- 6 swiss brown mushrooms, quartered
- 2/3 cup dry white wine
- 2 tbsp tomato paste
- 300g beef stir fry strips
- 800ml beef stock
- 1 tsp thyme
- 4 slices crusty bread
DIRECTIONS
- In a frypan, heat the oil over a medium heat and sauté the onion, garlic and spinach until softened, approximately 5 minutes.
- Place the onion, garlic, spinach, mushrooms, wine, tomato paste, beef, stock and thyme into the soup maker jug.
- Place the soup maker blending lid on top and secure to the base.
- Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
- Serve soup with crusty bread.
