Chicken Mince Stir-Fry

INGREDIENTS
- 1 small knob ginger
- 2 cloves garlic
- 2 coriander roots
- A pinch white pepper
- 1 tbsp vegetable oil
- 300g chicken mince
- 4 snake beans, sliced
- 2 large red chillies
- 2 tbsp oyster sauce
- 2 tbsp kecap manis
- 2 tbsp water
- 1/2 bunch basil leaves chopped
- 2 eggs, fried for serving
- Cooked jasmine rice for serving for four
DIRECTIONS
- Place the ginger, garlic, coriander root and pepper into a food processor and process for a few seconds until finely ground to a paste.
- Using an electric wok, heat the wok up to MAX setting and add the oil. Sauté the until golden and fragrant. Add chicken mince and fry until it begins to brown. Add chilli and snake beans and stir fry for about a minute.
- Season with oyster sauce, kecap manis, water and basil and mix well.
- Serve with cooked jasmine rice, topped with a fried egg and a sprinkling of basil leaves.
Tips:
- Substitute chicken mince for beef or pork mince
- It is essential your wok is completely warm before cooking for best results
- Prepare all your ingredients prior to cooking for easy and convenience
