Chunky Root Vegetables and Ham Soup

    • 1 tbsp olive oil
    • 30g butter
    • 1 brown onion, diced
    • 1 clove garlic, minced
    • 200g butternut pumpkin, 1cm diced
    • 170g parsnip, 1cm diced
    • 160g carrot, 1cm diced
    • 200g sweet potato, 1cm diced
    • 1 stick celery, sliced
    • ½ tsp black peppercorns
    • 1 tsp flaked salt
    • 2 bay leaves
    • 2 sprigs thyme
    • 700ml vegetable stock
    • 200g diced smoked ham
    • 2 tbsp parlsey, roughly chopped, to serve


    1. In a frypan, heat the oil and butter over a medium heat and sauté the onion and garlic until golden brown. Pour into the soup maker jug
    2. Add the pumpkin, parsnip, carrot, sweet potato, celery, peppercorns, salt, bay leaves, thyme and vegetable stock and place the soup maker blending lid on top and secure to the base.
    3. Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
    4. Stir through the smoked ham and serve with fresh parsley.
