Cinnamon, Macadamia Loaves

    Ingredients

    • 4 x Bengal spice tea bags
    • 125 grams butter softened
    • 1 cup brown sugar
    • 2 cups self-raising flour
    • 3 teaspoons cinnamon ground
    • 80 grams macadamia nuts crushed
    • 2 x 59g free-range eggs lightly whisked

    Directions

    1. Preheat a fan forced oven to 170°C. Spray 8 hole mini loaf pan with canola cooking spray to grease.
    2. In a 1 litre jug, place tea bags into 125ml of boiling water and allow to steep for 5 minutes. Remove tea bags and allow to stand for 2 minutes.
    3. Add butter and sugar to bowl and stir until butter has melted and sugar has dissolved.
    4. Fold through flour, cinnamon, nuts and eggs until just combined. Evenly distribute into mini loaf pans until they are filled 1cm under the rim.
    5. Place into the oven for 35 minutes or until a skewer can be removed, clean.
    6. Serve with a drizzle of honey and a good cup of tea!
