Coconut Rum Balls

INGREDIENTS
- 1 cup desiccated coconut
- 3 tbsp rolled oats
- 1 cup almond meal
- Pinch of sea salt
- 2 tbsp coconut oil, melted
- 3 tbsp coconut sugar
- 2 tbs agave
- 60ml coconut rum
- FOR COATING
- 50gm cocoa
- 50gm desiccated coconut
DIRECTIONS
- Using the leaf beater attachment on the Power Mix Planetary Bench Mixer, place the coconut, oats, almond meal, salt, oil, sugar, agave and rum into a bowl and mix together at medium speed until it comes together.
- Roll mixture into 25gm balls; dampen hands with water to make it easier to roll the balls. Once rolled, place them in the fridge to harden for an hour.
- Remove the balls from the fridge and roll each in either desiccated coconut or cocoa powder.
- For extra indulgence, coat the balls in melted chocolate before you roll them in cocoa and coconut.
