Healthy Toasted Macadamia and Date Muesli

Ingredients
- 4 cups oats
- 2 tablespoons light olive oil
- 1/3 cup pure maple syrup
- 1/2 cup pepitas (pumpkin seeds)
- 1/2 cup shredded coconut
- 1/2 cup dates cut into 3rds
- 1 cup macadamia nuts halved
- 2 tablespoons manuka honey
Directions
- Preheat a fan forced oven to 180C.
- In a bowl, combine the oats, oil and maple syrup. Toss until completely coated and then evenly spread onto a 20cm x 30cm baking tray. Place into the oven for 10 minutes, stirring after 5 minutes.
- In a bowl, combine the pepitas, coconut, dates and macadamias. Fold through the muesli and then place back into the oven for 10 minutes, stirring every 5 minutes.
- Pour the honey evenly over the top of the muesli and cook for a further 10 minutes, stirring every 5 minutes.
- Allow to cool and then eat immediately or store in an air tight container for up to 1 month.
