    Ingredients

    • 500 grams potatoes peeled, cut 2cm x 2cm
    • 1/4 cup pure cream
    • 1 egg yolk
    • 2 tablespoons olive oil
    • 1 medium brown onion diced
    • 1 clove garlic minced
    • 500 grams beef mince
    • 2 medium tomatoes diced
    • 1/4 teaspoon rosemary chopped
    • 1/2 cup peas (optional)
    • 1 beef stock cube

    Directions

    1. Preheat fan forced oven to 190°C.
    2. Place potatoes in a pot of cold water and boil until soft.
    3. Mash potatoes and then add the cream and egg yolk, stirring until thick and creamy. Set aside.
    4. Heat olive oil in a frypan and fry onion and garlic until golden.
    5. Add the mince to the frypan, cooking until browned and cooked through.
    6. Place tomatoes, rosemary, peas (if using) and stock cube into the frypan and stir until combined.
    7. Using 5 individual 15cm ramekins, spoon an equal amount of meat mixture into each. Top with mashed potatoes and place onto an oven tray.
    8. Bake for 10 minutes or until the potato is golden. Serve immediately.
