    Ingredients

    • 1kg rolled lamb roast
    • 1 tbsp rosemary, roughly chopped
    • 1 tbsp mint, roughly chopped
    • 2 tsp Dijon mustard
    • 2 cloves garlic, minced
    • 1 tsp salt
    • ¼ tsp ground white pepper
    • 1 tbsp olive oil

    Directions

    1. Place the low rack into the base of the oven bowl of Kambrook’s Turbo Convection oven.
    2. Place the roast into the oven bowl and onto the rack, skin side down. Place the extension ring on top and secure the lid.

    7. Allow to rest for 15 minutes and serve with roasted vegetables.

You can, but on separate racks. For more even cooking though, we recommend cooking them separately. Use the low rack for the roast, and the top rack for the vegetables. Use the extension ring. Also, turning the roast half way through cooking is advised.

I would like to cook roast meat and vegetables at same time but have found most pieces of meat are too high to fit the high rack over the meat, and it would be fantastic if I could put veggies in after turning the meat so it is all finished at same time. Any clues would be good about how to fit the high rack over meat. Last night the piece of lamb was only 1 kg weight but was still too high. I have used my new oven 3 times and I love it.
