Potato Leek Soup In The Slow Cooker

Ingredients
- 1 Leek sliced thinly, washed
- 1 onion diced
- 6 potatoes peeled, sliced finely
- 60 grams butter
- 3 clove garlic minced
- 2 litres vegetable stock
- 2 sprigs rosemary washed
Directions
- Using the slicing blade on the food processor, slice the leek, onion and potatoes.
- In a frying pan, heat the butter and place the leek, onion and garlic into the pan and sauté until golden brown.
- Place the leek, onion, garlic, potato, vegetable stock and rosemary into the slow cooker and cook on high for 4 hours or low for 8 hours.
- When soup is cooked, blend the soup in the slow cooker bowl with a stick mixer until creamy and smooth.
- Garnish with sour cream and serve with fresh bread.
