Quinoa Cakes

INGREDIENTS
- 2 cups quinoa, cooked
- ½ red onion, finely diced
- ¼ cup parsley, chopped
- ¼ cup goji berries
- ¼ cup parmesan cheese
- 2 eggs, beaten
- ½ gluten free flour
- A pinch of salt
- A pinch of pepper
- 30ml olive oil
DIRECTIONS
- Place cooked quinoa in a large bowl.
- Add the onion, parsley, berries, cheese, eggs, flour, salt and pepper. Mix well.
- Use hands to form the mixture into 8 even patties
- Preheat the electric frypan over a high heat (setting 10) and add olive oil. Once the oil is hot, add half of the quinoa cakes and cook, turning over half way. Repeat with the second batch.
- Remove the cakes from the oil and place them on paper towel to drain any excess oil.
- Serve while hot with a tomato relish or roasted red capsicum dip.
