Sausage Roll Pie

Ingredients
- 2 tablespoons olive oil
- 1 brown onion peeled, diced
- 2 clove garlic peeled, minced
- 1 kilogram beef mince
- 500 grams potatoes peeled, diced
- 180 milligrams vegetable stock
- 5 ready roll puff pastry sheets thawed
Directions
- Preheat a fan forced oven to 190°C.
- In a frypan, heat the olive oil and sauté the onion and garlic until browned. Add the mince and stir until browned and separated.
- Add the potato, vegetable stock and simmer for 10 minutes. Allow to cool.
- Divide into 5 portions and spoon in a sausage shape across the pastry sheet, 2cm from each end.
- Roll the pastry upwards to form a roll and pinch to seal the two ends together. Pinch the other ends together and place onto a baking tray lined with baking paper. Bake for 30 minutes or until golden brown.
