Snapper Fillets with Tarragon Butter on Green Beans

INGREDIENTS
- 4 pieces snapper fillets, folded in half
200g green beans, top and tailed - 2 tbsp butter, softened
- 2 tsp tarragon, finely shredded
- 2 tsp lemon juice
- 1 tsp salt
DIRECTIONS
- Fill the water reservoir to MAX level on the food steamer, insert the liquid collection container then place a steamer basket on top.
- Layer folded snapper fillets into the steamer basket and cover with lid.
- Turn timer dial to 20 minutes. After 13 minutes of cooking remove lid and place a layer support ring onto the first steamer basket, insert a second steamer basket, layer beans into the basket, cover with lid and continue cooking for remaining 7 minutes.
- Remove beans and distribute onto 4 separate plates, and then top with snapper.
- In a bowl, combine the butter, tarragon, lemon juice and salt and spoon a dollop onto each piece of snapper. Allow to melt and serve immediately.
