Spicy Bean Soup

    INGREDIENTS

    • 2 tbsp olive oil
    • 1 red onion, diced
    • 2 cloves garlic, crushed
    • ½ tsp dried chilli flakes
    • 1 medium zucchini, diced
    • 8 green beans, 2cm pieces
    • 410g can red kidney beans, drained
    • 400g can diced tomatoes
    • 1 tsp salt
    • 600ml vegetable stock
    • ¼ cup coriander leaves, roughly chopped
    • ¼ cup sour cream, to serve

    DIRECTIONS

    1. Place the oil, onion, garlic, chilli, zucchini, green beans, red kidney beans, tomatoes, salt and stock into the soup maker jug.
    2. Place the soup maker blending lid on top and secure to the base.
    3. Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
    4. Stir through the red kidney beans and coriander leaves and serve soup with a scoop of sour cream.
