Sticky Chicken and Cashew Rice

Ingredients
- 1 kilogram chicken drumsticks
- 1 teaspoon sesame oil
- 1 tablespoon sweet chilli sauce
- 2 teaspoons soy sauce
- 2 teaspoons green curry paste
- 165 ml coconut cream
- 1/2 cup water
- 2 tablespoons honey
- 1/2 cup raw cashew nuts
To Serve
- 1/2 cup coriander leaves washed
- 1/4 cup cashew nuts roasted, crushed
- 4 cups white rice cooked
Directions
- Place the chicken, oil, chilli sauce, soy, curry paste, coconut and water into the pressure cooker bowl and secure the lid. Select the casserole/curry setting or 33 minutes and allow to cook.
- Stir through the honey and raw cashews and set to the sauté setting. Cook for 20 minutes, stirring occasionally.
- Serve with coriander, chopped cashews and rice.
