Sweet Potato and Chickpea Soup

    INGREDIENTS

    • 400g sweet potato,2cm pieces
    • 420g can chickpeas, drained
    • 400g can diced tomatoes
    • 1 brown onion, diced
    • 2 cloves garlic, minced
    • 500ml vegetable stock
    • 1 tsp salt
    • 1⁄4 cup mint leaves, finely chopped, to serve
    • 2 tbsp olive oil, to serve

    DIRECTIONS

    1. Place the sweet potato, chickpeas, tomatoes, onion, garlic, stock and salt into the soup maker jug.
    2. Place the soup maker motor body/lid on to the soup jug.
    3. Select the ‘SMOOTH’ soup setting and then select the ‘START’ button.
    4. Serve soup with mint leaves and 2 teaspoons of olive oil each.
