Thai Chicken Snacks
INGREDIENTS
- 600g chicken breast (2 approximately)
- 1 small bunch coriander, roughly chopped
- 4 shallots, root removed
- 1 tbsp fish sauce
- 1 tbsp soy sauce or kecap manis
- 1 tbsp sweet chilli sauce +1/4 cup, to serve
- ½ cup panko bread crumbs
- 15 green beans, finely sliced
- ¼ cup vegetable oil
- 1 tbsp sesame oil
DIRECTIONS
- Using a food processor, place the chicken, coriander, shallots, fish sauce, soy sauce, sweet chilli sauce and bread crumbs into the food processor bowl and pulse until combined, approximately 10 times.
- Stir through the green beans and shape into 1 tbsp sized patties.
- Place the oil into a large frypan and heat over a medium heat for 1 minute. Add half of the patties and cook for 3 minutes on each side or until golden brown. Repeat and set all patties aside on absorbent paper towel.
- Serve with sweet chilli sauce.
