Tomato, Capsicum and Chorizo Soup

INGREDIENTS
- 3 small red capsicums, membrane removed, 3cm pieces
- 400g can diced tomatoes
- 1 potato (260g), peeled, 2cm diced
- 1 brown onion, diced
- 600g chicken stock
- 1 tbsp olive oil
- ¼ tsp ground cumin
- ¼ tsp chilli flakes
- 8 basil leaves + 4 basil leaves, shredded, to serve
- 2 chorizo sausages, diced, pan fried
DIRECTIONS
- Place the capsicum, tomatoes, potato, onion, stock, oil, cumin, chilli and basil into the soup maker jug.
- Place the soup maker blending lid on top and secure to the base.
- Select the ‘SMOOTH’ soup setting and then select the ‘START’ button.
- Serve soup with fried chorizo and shredded basil.
