Vegemite Brownie

INGREDIENTS
- 200g dark chocolate
- 140ml vegetable oil
- 1 ½ tbsp. vegemite
- 200g light brown sugar
- 3 eggs
- 1 tsp vanilla essence
- ½ cup plain flour
- ¼ cup cocoa powder
- 2 tsp baking powder
- ¼ cup chocolate chips
VEGEMITE CHOCOLATE SAUCE
- ¼ cup fresh cream
- 1 tsp butter
- 1 tsp vegemite
- 100g dark chocolate buttons
DIRECTIONS
- Pre-heat oven to 170°C.
- Line a 33cm x 23cm baking dish with greaseproof paper.
- Place the chocolate, vegemite and oil into a double boiler and stir the chocolate until it is melted. Remove from the heat and cool.
- Put the sugar, eggs and vanilla essence into your KAMBROOK bench mixer and whisk until light and fluffy. Add the cooled chocolate and slowly stir through.
- Sift the dry ingredients and fold through the egg and chocolate mix. Stir through the chocolate chips.
- Pour into the prepared baking dish and bake in the oven for 30 minutes.
- Remove from the oven and let cool before cutting.
TO MAKE THE SAUCE
- In a small saucepan heat the cream, butter and vegemite. Take off the heat and stir in the chocolate until it is melted.
- Drizzle over the brownie and serve.
