Zucchini, Feta and Thyme Open Tart

    Ingredients

    • 2 1/2 sheets frozen puff pastry defrosted
    • 1 tablespoon peanut oil
    • 2 large zucchini thinly sliced horizontally
    • 1 cup feta crumbled
    • 2 medium lemons zested
    • 1 bunch thyme shredded

    Directions

    1. Line a baking tray with baking paper and place the puff pastry onto the tray. Line the puff pastry with the zucchini and brush with the oil. Place into a preheated oven at 200°C for 20minutes. Remove from the oven and allow to cool.
    2. Top with feta, lemon zest and fresh thyme.
