Beef Goulash Soup

INGREDIENTS
- 2 tbsp olive oil
- 500g gravy beef, diced
- 1 brown onion, roughly chopped
- 1 clove garlic, thinly sliced
- 1 tbsp sweet paprika
- 1 tsp salt
- 420g can diced tomatoes
- 600ml beef stock
- 2 bay leaves
- ½ cup sour cream, to serve
- ¼ cup parsley leaves
DIRECTIONS
- In a frypan, heat the oil and then sear the diced beef until golden brown. Add the onion, garlic, paprika and salt and stir to combine. Toss in the pan for 2 minutes and then pour into the soup maker.
- Add the tomatoes, beef stock and bay leaves and place the soup maker blending lid on top and secure to the base.
- Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
- Serve with sour cream and parsley.
