Chunky Root Vegetables and Ham Soup

INGREDIENTS
- 1 tbsp olive oil
- 30g butter
- 1 brown onion, diced
- 1 clove garlic, minced
- 200g butternut pumpkin, 1cm diced
- 170g parsnip, 1cm diced
- 160g carrot, 1cm diced
- 200g sweet potato, 1cm diced
- 1 stick celery, sliced
- ½ tsp black peppercorns
- 1 tsp flaked salt
- 2 bay leaves
- 2 sprigs thyme
- 700ml vegetable stock
- 200g diced smoked ham
- 2 tbsp parlsey, roughly chopped, to serve
DIRECTIONS
- In a frypan, heat the oil and butter over a medium heat and sauté the onion and garlic until golden brown. Pour into the soup maker jug
- Add the pumpkin, parsnip, carrot, sweet potato, celery, peppercorns, salt, bay leaves, thyme and vegetable stock and place the soup maker blending lid on top and secure to the base.
- Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
- Stir through the smoked ham and serve with fresh parsley.
