Quinoa Cakes

    INGREDIENTS

    • 2 cups quinoa, cooked
    • ½ red onion, finely diced
    • ¼ cup parsley, chopped
    • ¼ cup goji berries
    • ¼ cup parmesan cheese
    • 2 eggs, beaten
    • ½ gluten free flour
    • A pinch of salt
    • A pinch of pepper
    • 30ml olive oil

    DIRECTIONS

    1. Place cooked quinoa in a large bowl.
    2. Add the onion, parsley, berries, cheese, eggs, flour, salt and pepper. Mix well.
    3. Use hands to form the mixture into 8 even patties
    4. Preheat the electric frypan over a high heat (setting 10) and add olive oil. Once the oil is hot, add half of the quinoa cakes and cook, turning over half way. Repeat with the second batch.
    5. Remove the cakes from the oil and place them on paper towel to drain any excess oil.
    6. Serve while hot with a tomato relish or roasted red capsicum dip.
