Slow Cooked Soft Beef Tacos

Ingredients
- 1kg diced beef
- 1 tbsp Mexican chilli powder
- 2 tsp ground coriander
- 1 tsp sweet paprika
- ¼ tsp chilli flakes
- 1 tsp dried oregano
- ½ tsp garlic flakes
- ½ tsp onion flakes
- 1 tsp flaked salt
- ¼ tsp ground black pepper
- 2 tbsp olive oil
- 2 medium brown onions, halved, thinly sliced
- 4 cloves garlic, thinly sliced
- 2 tbsp tomato paste
- 2 x 400g cans diced tomatoes
- 8 soft tortillas (recipe link here)
- 200g sour cream, to serve
- 100g grated taste cheese, to serve
- 1 lime, cut into wedges, to serve
Directions
- In a large bowl, place the beef and spices and toss to combine. Set aside for 10 minutes.
- Place the removable slow cooking bowl onto the stove top and heat over a medium heat. Add the oil, onion and garlic and sauté until golden brown.
- Add the beef and sear until just starting to brown. Stir through the tomato paste and diced tomatoes and place onto the ‘HIGH’ setting and allow to cook for 6 hours, stirring every few hours.
- Serve on soft tortillas with sour cream and cheese and roll to close.
NOTE: Optional toppings include shredded lettuce, avocado, tomato, grated cheese, salsa and red onion.
