Almond Blondie Christmas Trees

    INGREDIENTS

    • 200g caster sugar
    • 3 eggs
    • 200g unsalted butter, melted
    • 1 tsp. vanilla paste
    • 100g plain cake flour
    • 100g almond meal
    • 1 tsp. baking powder
    • 200g white chocolate bits
    • 80g chopped macadamia nuts
    • ½ cup icing sugar
    • Green food colouring
    • 100’s and 1000’s
    • Small edible stars

    DIRECTIONS

    1. Pre-heat the oven to 180°C.
    2. Grease and line a 20x30cm slice tray.
    3. Beat the sugar and eggs together until light and fluffy. Slowly drizzle in the melted butter and add the vanilla paste.
    4. Sift together the flour, almond meal and baking powder and fold into the egg mixture.
    5. Fold in the white chocolate bite and macadamia nuts
    6. Pour into the prepared tray and bake for 30-35 minutes or until a skewer comes out clean when inserted into the centre.
    7. Let cool in the tray slightly and then cool on a wire cooling rack.
    8. Cut lengthways into 3 and then cut each length into triangles.
    9. In a small bowl, place the icing sugar and add 1 drop of green food colouring and 5ml of water. Stir until a thick pastes is formed (if a little more water is required, add a little more).
    10. Place the icing into a little sandwich bag and cut a tiny corner off and then slowly pipe the icing in zig zag drizzles on each triangle to resemble a Christmas tree. Sprinkle a few 100’s and 1000’s over the Christmas trees whilst the icing is still moist and place the stars at the top of the triangle.
