DIRECTIONS

  1. Preheat the cupcake maker until the ready light switches on.
  2. Using an electric mixer, cream the butter, sugar and honey until thickened and lightened in colour, approximately 4 minutes.
  3. Add the egg and beat well. Fold through the flour, banana, cinnamon and milk until just combined.
  4. Spoon a tablespoon of cupcake mixture into each mini cupcake well and close the lid and cook for 8 minutes.
  5. Turn the mini cupcakes out onto a cake rack and cool.
  6. To make the icing, cream all ingredients using an electric mixer for 3 minutes or until the sugar has dissolved completely. Evenly distribute over the cupcakes and serve.
