Our lemon tree is nearing the end of it’s productive period just as we have hit an unusually warm period for Spring.  I have been out collecting the remainder from the tree and juicing them to store for use as required until the season comes around again. I juice the lemons and freeze the juice in ice cube trays. Each cube is approximately 1 tablespoon.  Storing the juice in this way means that I can avoid purchasing imported lemons.

In preparation for finishing of the last of our lemons I also made up this refreshing, thirst quenching lemonade. My kids loved this – although I did add some extra water to their glasses when I poured it.

I enjoy the intense flavour of lemons. You can adjust the flavour to your liking by simply adding a little more water as you serve it.  You may also like to add some to icy pole moulds to freeze for the kids as an after school treat on a warm afternoon.
