Buttermilk Pancakes

INGREDIENTS
- 375ml buttermilk
- 1 egg
- 2 tsp vanilla essence
- 2 cups self-raising flour
- 1/4 tsp bicarbonate of soda
- 1/4 cup caster sugar
- 300ml pure cream, whipped
Wild Berry Compote
- 1 cup frozen mixed berries
- 1/4 cup caster sugar
DIRECTIONS
- Preheat the skillet at the 'PANCAKE' setting (6) until heating light turns off.
- In a bowl, combine the buttermilk, egg and vanilla, and whisk to combine.
- In another bowl, place the flour, bicarbonate of soda and caster sugar, and create a well in the centre. Pour the milk mixture into the centre of the well and whisk inwards insuring there are no lumps.
- Pour some batter into the skillet and cook for 3-4 minutes or until bubbles form and start to pop. Flip and cook for a further 2 minutes.
- Repeat step 4 until all batter is used.
- Remove from skillet and serve with cream and wild berry compote.
