Wild Berry Compote


  1. Preheat the skillet at the 'PANCAKE' setting (6) until heating light turns off.
  2. In a bowl, combine the buttermilk, egg and vanilla, and whisk to combine.
  3. In another bowl, place the flour, bicarbonate of soda and caster sugar, and create a well in the centre. Pour the milk mixture into the centre of the well and whisk inwards insuring there are no lumps.
  4. Pour some batter into the skillet and cook for 3-4 minutes or until bubbles form and start to pop. Flip and cook for a further 2 minutes.
  5. Repeat step 4 until all batter is used.
  6. Remove from skillet and serve with cream and wild berry compote.
