1. Fill and preheat a 3 litre deep fryer to 180C.
  2. In a bowl, toss together the flour, Cajun spice, parsley and garlic powder and then coat the chicken wings.
  3. Place the chicken wings into the deep fryer basket, 6 at a time in two batches. Cook for approximately 5 minutes or until golden brown.
  4. To make the blue cheese sauce, combine the sour cream, mayonnaise, blue cheese, salt and lemon juice in a bowl and stir until it forms a smooth paste. Serve with Cajun chicken wings.
