INGREDIENTS
1 tbsp olive oil
4 tsp flaked salt
3 red capsicums
1 clove garlic
3 tbsp sour cream
4 basil leaves
DIRECTIONS
Preheat a fan forced oven to 200C.
In a bowl, place the olive oil, 2 tsp flaked salt and the capsicums and toss to combine. Place onto a baking tray and into the oven to bake for 30 minutes or until the capsicums are well blistered. Remove from the oven and place into a plastic zip lock bag and allow to sweat for 30 minutes.
Remove the skins from the capsicums and place them into the chopper bowl. Add 2 tsp flaked salt, garlic, sour cream and basil leaves and secure the lid on top. Attach the stick mixer motor and blend until completely combined, approximately 30 seconds.
