  1. In a frypan, heat the oil and add the chicken, ginger, garlic and shallots. Fry for 6 minutes or until chicken has browned, set aside.
  2. Fill a large bowl with warm water and submerge your noodles for 5 minutes, drain.
  3. Fill each lettuce leaf with equal amounts of noodles and chicken.
  4. Top with diced mango and fresh lime juice and roll to form a package.
