  1. Preheat a fan forced oven to 200C and set aside a large flat baking tray.
  2. Place the wraps onto the baking tray and drizzle with olive oil, sprinkle with sesame seeds and salt and place into the oven for 15 minutes or until crisp and golden. Break into 3cm pieces and set aside.
  3. Using a food processor, slice the cucumbers and radishes using a fine slicing disc.
  4. Toss the cucumber, radish, mint, parsley, tomatoes, lemon juice, olive oil, garlic, chicken and Lebanese bread together in a large bowl and sprinkle with sumac.
