1. Fill a large bowl with warm water and place a rice paper sheet into it for approximately 10 seconds or until softened and slimey. Place the sheet onto a clean chopping board and fill with chicken, carrot, cucumber, snow peas, shallots, 1 coriander leaf, 1 basil leaf and 1 mint leaf.
  2. Using the instructions on the rice paper sheet packet, fold the left and right sides inwards and then roll the base over to close. Set aside on a tray and repeat until all are completed.
  3. In a bowl, combine the peanut butter, hoi sin and rice wine vinegar. Stir until it forms an even paste and serve with rice paper rolls.
