Chicken, Sweet Potato, Tomato and Quinoa Salad
PREP TIME: 10 min, COOK TIME: 20 min, READY TIME: 30 min, SERVINGS: 4
INGREDIENTS
- 2 cups quinoa, cooked
- 1 sweet potato diced and roasted
- 1 chicken breast cooked and sliced
- 1 punnet cherry tomatoes cut in half
- ¼ bunch parsley, chopped
- ¼ bunch basil, sliced
- 150g feta cheese
DRESSING
- 100ml olive oil
- 1 tbsp Dijon mustard
- ½ lemon, juiced
- A pinch of salt
- A pinch of pepper
DIRECTIONS
- Place cooked quinoa in a large bowl.
- To the bowl, add sweet potato, cooked chicken, cherry tomatoes and fresh herbs.
- To make the dressing, add oil, mustard, lemon juice, salt and pepper in a bowl and whisk together.
- Pour dressing over the quinoa mixture and combine well.
- Garnish the salad with crumbled feta.
