DIRECTIONS

  1. Place cooked quinoa in a large bowl.
  2. To the bowl, add sweet potato, cooked chicken, cherry tomatoes and fresh herbs.
  3. To make the dressing, add oil, mustard, lemon juice, salt and pepper in a bowl and whisk together.
  4. Pour dressing over the quinoa mixture and combine well.
  5. Garnish the salad with crumbled feta.
