DIRECTIONS

  1. In a small pot, heat up the young coconut water, Agar Agar and caster sugar.
  2. Bring to the boil and simmer for 1 minute to ensure all the Agar Agar and sugar have dissolved.
  3. Pour jelly into a mould or metal tray and place it into the fridge to set. At least 30 minutes, until it starts to firm.
  4. For the second layer, place chopped watermelon, vodka, Cointreau and lime into the large personal blending  bottle; securely seal the blade assembly inside the blending jug.
  5. Lock the blending jug of the motor base by aligning the arrows and press the ‘PULSE’ button for 30 seconds or until watermelon resembles puree.
  6. Measure 400ml of the mixture into a small pot over heat.
  7. Add  Agar Agar and sugar to the pot and stir. Bring to the boil and simmer for 1 minute to ensure the Agar Agar and sugar have dissolved. Allow to cool slightly before pouring over the first layer that should be completely set.
  8. Place into the fridge to set for at least an hour, though timing might depend on the size of your mould or tin.
  9. Once set, remove from the mould or tin and serve.
