Green Curry Pumpkin Soup

    INGREDIENTS

    • 2 cloves garlic, minced
    • 1 brown onion, diced
    • 2 tsp green curry paste 600g pumpkin,
    • 2cm pieces 100g potatoes, 2cm pieces
    • 550ml vegetable stock
    • 200ml coconut milk
    • 4 pieces bread, to serves

    DIRECTIONS

    1. In a saucepan, heat the oil and sauté the garlic and onion.
    2. Place all ingredients into the soup maker jug.
    3. Place the soup maker motor body/lid on to the soup jug.
    4. Select the ‘SMOOTH’ soup setting and then select the ‘START’ button.
    5. Serve soup with fresh bread.
