Green Eggs and Goats Cheese

Ingredients
- 4 slice spelt bread
- 60 grams butter
- 3 shallots root removed, thinly sliced
- 6 x 59g free range eggs
- 80ml milk
- 1/4 cup parsley thinly chopped
- 1/4 cup mint finely chopped
- 1/4 cup baby spinach finely chopped
- 1 avocado seed removed, roughly chopped
- 1 teaspoon salt flakes
- 1/4 teaspoon ground white pepper
- 80 grams goats cheese to serve
Directions
- Place the bread into the toaster and set to setting 3 and toast until finished, or golden brown.
- Preheat the skillet frypan to setting 6 and add the butter and shallots. Sauté until golden brown, approximately 4 minutes. In a bowl, whisk together the eggs, milk, herbs, spinach, avocado, salt and pepper and then pour into the skillet frypan. Cook for 3 minutes, stirring every minute to gently break up eggs.
- Divide the eggs and serve on a piece of toast and top with even amounts of goats cheese.
