  1. Place the bread into the toaster and set to setting 3 and toast until finished, or golden brown.
  2. Preheat the skillet frypan to setting 6 and add the butter and shallots. Sauté until golden brown, approximately 4 minutes. In a bowl, whisk together the eggs, milk, herbs, spinach, avocado, salt and pepper and then pour into the skillet frypan. Cook for 3 minutes, stirring every minute to gently break up eggs.
  3. Divide the eggs and serve on a piece of toast and top with even amounts of goats cheese.
