1. Preheat a fan forced oven to 190°C.
  2. In a medium frypan, heat the oil over a low heat for 2 minutes. Add the onion and garlic and sauté for 5 minutes or until clear.
  3. Add the taco seasoning and the tomato paste; stir until it has formed a thick even paste.
  4. Add the tomatoes and kidney beans. Simmer over a low heat for 5 minutes, stirring regularly.
  5. Layer the base of a deep crockery dish (20cm wide) with tortillas and top with bean mixture. Sprinkle cheese over the top and place into the oven for 10 minutes.
  6. Serve with avocado and sour cream.
