In a bowl, combine the oats, oil and maple syrup. Toss until completely coated and then evenly spread onto a 20cm x 30cm baking tray. Place into the oven for 10 minutes, stirring after 5 minutes.
In a bowl, combine the pepitas, coconut, dates and macadamias. Fold through the muesli and then place back into the oven for 10 minutes, stirring every 5 minutes.
Pour the honey evenly over the top of the muesli and cook for a further 10 minutes, stirring every 5 minutes.
Allow to cool and then eat immediately or store in an air tight container for up to 1 month.
